The Right Whale Cold Brew System offers a truly unique approach to cold brewing. Unlike traditional coffee percolators that use boiling water, our system employs a cold percolation process. A digital control unit pulses room temperature water over freshly ground coffee for 12 to 24 hours. Our custom-designed, reusable filter bag allows for the use of fine-ground coffee, maximizing extraction in a shorter time.
This zero-bypass system ensures complete saturation of the coffee bed.
Water flows evenly through the stainless steel brewing chamber and into the reservoir, where it's repeatedly pumped back through the grounds. This cyclical process creates a natural, double-filtering effect. The resulting concentrate retains the flavorful dissolved solids while removing the particulates that cause cloudiness, ultimately enhancing the coffee's flavor, appearance, and mouthfeel.
Here are the brewing instructions:
Fill the supplied filter bag with 4 pounds (2 pounds in Pygmy) of your choice of ground coffee and place it in the stainless steel brewing basket
Use a grind size between a fine grind and a drip grind
Insert the pumping system into the outer vessel and lock the start/stop switch to the side of the outer vessel.
Pour 2.5 gallons of filtered water into the outer vessel (1 gallon 1 qt in Pygmy) this will create a coffee/water ratio of 5 -1.
Place the brew basket on top of the stand.
Place the circular water distribution plate on top of the stainless steel brewing basket
insert the power cord into the pumping assembly.
Press the on button attached to the power cord and begin the brew process.
After the 12-24 hour brewing process is complete, turn the power off and turn the flow tube at the top of the pump mechanism to the side. Turn on the pump and pump the concentrate into a storage vessel of your choice.
Your concentrate yield should be between 1.5 and 2 gallons of concentrate (3 qts in Pygmy). With the dark French roast your TDS should be about 4%, and your ready-to-drink yield should be about 6 gallons (9 qts in Pygmy).
